Ingredients…
These are for the crust.
- 1 cup almond flour
- 2 tablespoons melted coconut oil
- 2 tablespoons honey or maple syrup
These are for the filling.
- 2 cups Greek yogurt (plain)
- 1 cup low-fat cream cheese
- 1/2 cup protein powder
- 1/2 cup fresh strawberries, pureed
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
Method…
- Preheat your oven to 325°F (163°C). Grease an 8-inch (20 cm) springform pan.
- Prepare the crust by mixing almond flour, melted coconut oil, and honey in a bowl until combined. Press the mixture into the bottom of the prepared pan to form an even layer.
- Bake the crust for 10 minutes. Remove from the oven and let cool while preparing the filling.
- Combine Greek yogurt, low-fat cream cheese, protein powder, pureed strawberries, honey, eggs, and vanilla extract to make the filling. Mix until smooth.
- Pour the filling over the cooled crust in the springform pan.
- Bake for 40 to 45 minutes or until the center is set and the edges are lightly golden. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for one hour.
- Put the cheesecake in the refrigerator and chill for at least four hours or overnight for best results.
- Remove from the springform pan, slice, and enjoy!
2. Strawberry Protein Angel Delight

This is what you need to make the base.
- 1 cup Greek yogurt (plain)
- 1/2 cup low-fat cream cheese

- 1 teaspoon vanilla extract
And you’ll need these for the meringue.
- 2 large egg whites
- 1/4 teaspoon cream of tartar
- 2 tablespoons honey or maple syrup (for sweetness)
Method…
- Beat the egg whites and cream of tartar in a bowl, until soft peaks form. Gradually add honey or maple syrup while continuing to beat until stiff peaks form.
- In another bowl, mix Greek yogurt, low-fat cream cheese, protein powder, pureed strawberries, honey, and vanilla extract until smooth and well combined.
- Gently fold the meringue into the yogurt mixture. It should remain light and airy.
- Spoon the mixture into individual serving dishes or a large bowl. Refrigerate for at least two hours or until set.
- Garnish with additional fresh strawberries if desired. Enjoy!

3. Strawberry Protein Pancakes

Method…
- In a large bowl, combine the oat flour, protein powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the almond milk, Greek yogurt, eggs, honey or stevia, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the diced fresh strawberries.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or coconut oil. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
- Serve warm with your favourite toppings.
4. Strawberry Protein Ice Lollies

Method…
- In a blender, combine the fresh strawberries, protein powder, Greek yogurt, almond milk, honey or stevia, and vanilla extract. Blend until smooth.

- If you’re using sticks, put them in the mold and place them in the freezer. Freeze for at least four hours or until completely solid.
